The name, which means slipper in Italian, was given because of its flat, oval shape. Break open the crisp crust to discover a light, porous interior.
Suggested Uses
A great bread for soups, dipping oils and tapenades. Try with a spot of extra virgin olive oil drizzled with balsamic vinegar.
Overnight Soufflé
5 slices of Breadsmith Ciabatta
butter
3/4 cup cheddar cheese, shredded
6 eggs
2 cups milk
salt and freshly ground black pepper
Spread butter on one side of each slice of Ciabatta. Cut the slices into eighths and place alternately into a 2-quart greased casserole dish. Layer it with shredded cheddar cheese. Beat 6 eggs with 2 cups of milk and season with salt and pepper. Pour over bread. Refrigerate overnight. Bake uncovered at 350 degrees for 60 to 75 minutes.
